Beet , chedder & apple tarts makes 6

1 sheet frozen puff pastry thawed & cut into 6..... 4 1/2 inch rounds
3/4 cup shredded white cheddar
1 apple cored & sliced thin
1 small beet , pealed & sliced thin
salt & pepper
1/2 tsp.  fresh thyme leaves

heat oven to 400

place pastry rounds on parchment lined baking sheet
prick all over with a fork

divide  1/2 the cheese among the pastry
top each with 2-3 apple slices , tuck 2-3 beet slices among the apples
top with cheese
sprinkle with salt, pepper & thyme

Bake til golden 13 - 15 min.

serve warm or at room temp.

Simple Vegetable Curry (serves 4 )

this will take you just 30 min.

you need :

1 Tbsp   EVOO
2 tsp brown mustard seed
1 onion diced
1 cup rice
salt & pepper
1 Tbsp  red curry paste
1 cup coconut milk
1 sweet potato cut in 1 inch pieces
1 small cauliflower cut in florets
1 can (15.5 oz) chick peas


In a medium sauce pan heat oil , add mustard seed & 1/2 of the onion & cook til the onion is soft (3 min)
add rice & stir , add 1 1/2 cups of water,season with salt & pepper , bring to a boil & cover & simmer til water is absorbed. fluff before serving

meanwhile in a heavy pot heat 2 Tbsp oil, add remaining onion & cook til soft.
add curry paste , coconut milk & 1 cup water & bring to a boil
add sweet potato & cauliflower simmer til tender
stir in chick peas & serve over the rice .

A request from Germany Mulligatawny soup

2-3 pounds of chicken cut up
1 cup each  diced  onion, celery, carrot, turnip
1 quart of water
1 tsp each  tarragon  & thyme

1/4 cup chopped parsley

salt & pepper & 1 bay leaf

simmer for 3 hours

remove chicken & strain broth

place broth in pot

Fry 5 slices of bacon , add 4 tomatoes pealed & chopped .

stir in 1/3 cup of flour & 2 tsp. curry powder  ...Add to broth

add chopped chicken & simmer 2 hours

serves 8 people

This is what I am making ai Vico this morning

Creme Brulee  ala orange

6 egg yolks

1/2 c + 6 Tbsp sugar

1 1/3 cut heavy cream

2/3 cup milk

2 1/2 tsp. orange peel

1 1/2 Tbsp.  Grand Marnier


Pre heat your oven to 325

butter 6 .... 3/4 cup dishes (oven proof)

beat eggs & sugar ....bring  cream, peel & milk  to a simmer

whisk hot into eggs  & stir in grand marnier

STRAIN

divide into dishes & bake in a water bath 15-20 minutes

Remove from oven & water ...cool  ..cover & refrigerate

when serving sprinkle 1 TBSP sugar in each & broil til brown

Serve and enjoy

It's geting cold Soup is good food

As it is getting cold soup makes a great meal .

Roasted Chicken & Butternut Soup

Preheat oven to 425.......in a roasting pan toss together 4 bone in ,skin on chicken thighs , 1 medium

butternut squash (2 1/2 pounds) pealed, seeded & diced , 1 medium onion ( I like red onions) diced &

2 TBSP. of  EVOO (extra virgin olive oil)

Bake til chicken & squash are cooked through

Place chicken on a plate to cool.

Transfer squash & onions to a medium pot & add 4 cups of  chicken broth ( or water ) along with 1/4 tsp of

ground cumin & coriander .  Bring to a summer & with a potato masher , mash some of the vegetables

Discard skin & bones from the chicken & dice the meat.  Add to the soup .  Stir in 2 TBSP lemon juice

This soup serves 4 people .

Add your favorite salad & bread for a great meal .

New Zealand Greenshell Mussels Barbecue (6 servings)

36  greenshell mussels
3 ounces of honey
12 ounces of orange juice
6 ounces of EVOO
1 1/2 TBSP  fresh thyme

Thaw mussels

Combine honey,oj,oil & thyme .

marinate mussels 10 minuts

Grill or bake til hot

Chocolate Espresso Cake

1 pound butter

1 cup sugar

1 cup espresso

1 pound of chocolate chips

8 eggs

In a 2 quart saucepan , bring the butter, sugar , & espresso  to a boil.  Add the chocolate. Whisk in the eggs.

Pour into a greased & lined 9" cake pan .Bake in a water bath 350  for  30-35 minutes.

let the cake cool overnight before inverting it for serving .

Chicken Coop

1 pound  diced boneless chicken breast

12 each fresh moshrooms

3 cups fresh  Broccoli flowerets

1 quart Alfredo sauce

1 pound  cooked pasta

Saute chicken , mushrooms , & broccoli , until the chicken is almost fully cooked

stir in the alfredo sauce & heat until all is cooked

serve over cooked pasta

this serves 4 -6 people
