As it is getting cold soup makes a great meal .
Roasted Chicken & Butternut Soup
Preheat oven to 425.......in a roasting pan toss together 4 bone in ,skin on chicken thighs , 1 medium
butternut squash (2 1/2 pounds) pealed, seeded & diced , 1 medium onion ( I like red onions) diced &
2 TBSP. of EVOO (extra virgin olive oil)
Bake til chicken & squash are cooked through
Place chicken on a plate to cool.
Transfer squash & onions to a medium pot & add 4 cups of chicken broth ( or water ) along with 1/4 tsp of
ground cumin & coriander . Bring to a summer & with a potato masher , mash some of the vegetables
Discard skin & bones from the chicken & dice the meat. Add to the soup . Stir in 2 TBSP lemon juice
This soup serves 4 people .
Add your favorite salad & bread for a great meal .
