Beet , chedder & apple tarts makes 6

1 sheet frozen puff pastry thawed & cut into 6..... 4 1/2 inch rounds
3/4 cup shredded white cheddar
1 apple cored & sliced thin
1 small beet , pealed & sliced thin
salt & pepper
1/2 tsp.  fresh thyme leaves

heat oven to 400

place pastry rounds on parchment lined baking sheet
prick all over with a fork

divide  1/2 the cheese among the pastry
top each with 2-3 apple slices , tuck 2-3 beet slices among the apples
top with cheese
sprinkle with salt, pepper & thyme

Bake til golden 13 - 15 min.

serve warm or at room temp.
