this will take you just 30 min.
you need :
1 Tbsp EVOO
2 tsp brown mustard seed
1 onion diced
1 cup rice
salt & pepper
1 Tbsp red curry paste
1 cup coconut milk
1 sweet potato cut in 1 inch pieces
1 small cauliflower cut in florets
1 can (15.5 oz) chick peas
In a medium sauce pan heat oil , add mustard seed & 1/2 of the onion & cook til the onion is soft (3 min)
add rice & stir , add 1 1/2 cups of water,season with salt & pepper , bring to a boil & cover & simmer til water is absorbed. fluff before serving
meanwhile in a heavy pot heat 2 Tbsp oil, add remaining onion & cook til soft.
add curry paste , coconut milk & 1 cup water & bring to a boil
add sweet potato & cauliflower simmer til tender
stir in chick peas & serve over the rice .
